Sticky IPA Glazed Chicken Wings

The hop character works particularly well against honey, lime and a little heat.

Ingredients

2 lb chicken wings

1 tbsp neutral oil

Salt and pepper

IPA glaze

¾ cup Partake IPA

⅓ cup honey

2 tbsp soy sauce

1 tbsp brown sugar

1 tbsp lime juice

2 cloves garlic, minced

1 tsp grated ginger

½–1 tsp chili flakes

1 tsp cornstarch mixed with 1 tbsp water

Directions

  1. Heat oven to 425°F / 220°C.
  2. Toss wings with oil, salt and pepper.
  3. Arrange on a parchment-lined baking sheet and bake for 40–45 minutes, turning once.
  4. Meanwhile, combine Partake IPA, honey, soy sauce, brown sugar, lime juice, garlic, ginger and chili flakes in a saucepan.
  5. Simmer for 8–10 minutes.
  6. Stir in the cornstarch slurry and cook until glossy and slightly sticky.
  7. Toss the cooked wings generously in the glaze.
  8. Return to the oven for another 3–5 minutes to caramelize.
  9. Finish with cilantro or green onion and charred lime wedges.
